Cancun Spanish Language Institute

Study Spanish in Cancun! The Cancun Spanish Language Institute offers Spanish classes at all Spanish levels, in intensive small group classes or private tutoring.

New classes start every Monday, year-round, and you may study for as many weeks as you choose. Our classes are taught by experienced Mexican teachers in a relaxed atmosphere. Choose between Morning classes (9am-Noon) or Late Afternoon classes (4pm-7pm). Academic credit available from an accredited U.S. college for students or educators.

The school is located in downtown Cancun, a short bus or cab ride to Cancun’s hotel zone and beautiful beaches.

PRICES:
Small-group classes (15 hours/week): $150USD
Private Tutoring (flexible schedule): $20USD/hour
Registration fee: $65USD

Recipe–ADOBO PARA COCHINITO

ADOBO PARA COCHINITO (marinade)

30 dried guajillo chiles
4 dried avocado leaves
1/4 cup cider vinegar
8 cloves garlic peeled and coarsely chopped
2 tbsp ground cinnamon
1 tbsp dried oregano
1 1/2 tsp dried thyme
10 bay leaves crumbled
freshly ground black pepper

Rinse chiles. Heat a skillet over medium high heat and add chiles. Cook, turning often, until fragrant, about 40 seconds.

Transfer chiles to a bowl and cover with hot water. Let soak until soft, about 25 minutes.

In the same skillet, toast avocado leaves, turning once, for 30 seconds. Crumble and set aside.

Drain chiles and remove and throw away stems and seeds.

Put chiles in blender and add avocado leaves, vinegar, cinnamon, oregano, thyme, bay leaves, and pepper to taste. Puree until smooth.

Use as a marinade for meats.

Makes about 2 cups

Recipe–FRUIT WITH LIME & CHILES

FRUIT WITH LIME AND CHILES

4 cups cut up and peeled fruit such as coconut, mango, watermelon, pineapple, papaya and cantaloupe.
1 lime cut in half
salt chile powder

Divide fruit into 2 cups or bowls and squeeze lime juice over the fruit.

Sprinkle with salt and chile powder to taste.

Makes 2 servings

Recipe–CORN TORTILLAS

CORN TORTILLAS

2 cups Masa harina

Put masa into a medium bowl and add 1 1/4 cups of warm water. Stir until the dough forms and then place on work surface and knead until smooth.

Divide the dough into 10 balls and drape plastic wrap over the base of a tortilla press.

Put one ball at a time into the center of the press, cover with plastic wrap and close press to flatten.

You can also put the dough between 2 pieces of plastic and roll out with a rolling pin if you do not have a tortilla press.

Recipe–PICO DE GALLO

PICO DE GALLO

2 ripe medium tomatoes diced
1 medium sweet onion peeled and diced
2 scallions
2-3 serrano chiles stemmed, seeded and chopped
1/4 bunch cilantro chopped
1 clove of garlic peeled and minced
Juice of 1 lime
salt

Mix tomatoes, onions, scallions, chiles, cilantro, garlic and lime juice into a medium bowl. Mix very well.

Cover and set aside at room temperature for 30 minutes before serving. Can also be refrigerated for up to 8 hours before serving.

Recipe–CRAB SALSA

CRAB SALSA

1 lb jumbo lump crabmeat picked apart
4 ripe medium tomatoes diced
1 small red onion peeled and sliced
1/2 cup boiled fresh or frozen white corn
Leaves of 1/2 bunch of cilantro chopped
1 medium scallion trimmed and chopped
Juice of 2-3 limes
2 tsps white vinegar
1/2 tsp ground cumin
salt and freshly ground black pepper

Mix crabmeat, tomatoes. onions, corn, scallions, and cilantro in a medium bowl. Drizzle lime juice and vinegar over the mixture.

Add cumin and season to taste with salt and pepper.

Toss gently but be careful not to break up lumps of crabmeat. Adjust the seasonings if needed.

Cover and refrigerate for at least 1 hours.

Serve with tortilla chips or crackers.

Recipe–SHRIMP COCKTAIL

SHRIMP COCKTAIL

1 lb small shrimp boiled and peeled
1 chopped up tomato
1/2 small white onion chopped and peeled
1 clove of garlic peeled and minced
1 jalapeno stemmed, seeded and sliced
1/2 cup extra virgin olive oil
1 tbsp chopped parsley leaves
salt and freshly ground white pepper
1 ripe avocado
1 lime cut into wedges

Mix the shrimp, tomatoes, onions, garlic, and jalapenos in a medium bowl. Stir in the oil and parsley then season with salt and pepper to taste.

Cut the avocado in half lengthwise. Remove pit and throw away. Peel of the outer skin and throw away and slice the remaining pulp.

Top the mixture with the avocado slices and serve with lime wedges.

Makes 4 servings
